Cambium is refined but relaxed, providing you with an opportunity to unwind in chic yet comfortable surroundings whilst experiencing delicious cuisine inspired by the enchanted New Forest.
Head Chef Alistair Craig's traditional dishes are interpreted with simplicities and flavours, capturing the essence of the local area and embracing the nature of the seasons. “I like to use local ingredients in a worldly way reinterpreting a dish to take advantage of the local area’s rich natural resources”. This all leads to a creative and enchanting dining experience, in stylishly designed surroundings. Prior to his appointment at Cambium, Alistair was Head Chef at a two AA Rosette restaurant in Scotland and has also previously worked under the wing of Head Chef, Matthew Tomkinson as Sous Chef at the Terrace Restaurant in Beaulieu.
As the UK has become a premier wine producing region, Cambium also boasts one of the biggest collections of English wines in the country, featuring vineyards such as Camel Valley, Ridgeview and Chapel Down and is now recognised with an AA Notable Wine List.
