Ingredient List
8 Boneless chicken thighs
2 Spanish onions, sliced into rings
3 sliced garlic cloves
150g of Chorizo sausage
1 sliced red pepper
1 small tin of chopped tomatoes
250ml of chicken stock
2 Tbsp of flour
1 Tbsp of Dried Mixed Herbs
Fresh thyme
Mix the flour with the herbs and coat the chicken thighs
Heat the oil and butter in a heavy based casserole and brown the meat. Take out of the pan and then saute the onions and garlic in the juices for 2 minutes
Turn up the heat, add the sausage and pepper and fry for 2 minutes. Add the chicken back to the pan and add the tomatoes. Stir and add the stock. Once the liquid starts to bubble turn down to a simmer.
Cover and cook on a low heat for 30 minutes. Decorate with thyme and serve.
