Carey's Manor - New Chef Cooks up a Storm

Carey's Manor Debuts New Executive Chef!

Careys Manor is delighted to announce the appointment of new Executive Chef Chris Wheeldon, offering the perfect opportunity to launch new menus and a re-dedication to its mouth - watering award-winning cuisine.
After a long culinary adventure travelling and cooking throughout the United Kingdom, Chris returns to his birth place of Hampshire to start at Careys as Executive Chef. Chris discovered at an early age that his passion was not with woodwork and metal work, but with cooking “It was just something that I always knew I wanted to do”.

When asked the reasons why he was interested in working at Careys Manor, Chris says “It’s a fabulous hotel with a beautiful location and offers a great opportunity to create really innovative menus.  Also, I really respect Careys Manor’s ethical food policies, which include buying the finest ingredients and sourcing local, free range and organic produce wherever possible. These are key to creating a superb menu and offering the best quality cuisine.”

Chef Chris Wheeldon credits his mother, other chefs (particularly celebrity Chef Gary Rhodes) and his culinary travels, as influencing the way he cooks today. “I try and draw ideas from every source to invent new dishes. I like things that are simple and classic, but enjoy adding my own unique twist. Careys Manor offers me a great opportunity to do this.”

With three restaurants, the menus at Careys Manor feature a variety of dishes from traditional home cooking to international cuisine. Chris will be mainly working at the 2 AA rosette Manor Restaurant. Having worked in similar award-winning hotel restaurants around the country, maintaining an excellent standard will be no problem for Chris. As well as the main hotel restaurant, Chris will also oversee the French Head Chef working in the hotel’s French bistro Blaireaus and also the Thai chefs who prepare authentic cuisine for the Zen Garden Thai Restaurant.

Chris will work side by side with Careys’ experienced team of chefs to continue the evolution of its distinctive menu. He is looking forward to making his mark at Careys Manor and creating some exciting new menus.
“Our aim is to offer guests an array of tempting options using the season’s finest ingredients. From appetizers to puddings, we want to make each bite a unique experience.”

"Chris, with his extensive experience, fits in seamlessly," says General Manager, James Hiley-Jones, "I am delighted to welcome him to Careys. We are all excited to hear our guests comments on his fantastic food. "

To taste some of the delicious dishes on Chris’s exciting new menu, visit Careys Manor, Brockenhurst, New Forest, Hampshire.

The Manor Restaurant, Blaireaus and the Zen Garden are open to non-residents.
